I once worked a job at the other end of this situation (DNR impounds, not Vet) where I was tasked with checking the freezers against inventory and removing anything whose case was closed or over 3 years old.
I was the first person to do this job in several years. I filled a pick-up bed with "old" impounds. Then sorted the remains (errr, sorry for that one) by docket date.
Since I had done all that sorting, I asked my boss how often I'd have to go back for evidence. Probably never. Seems only the new judges allowed the actual animal killed by a poacher, to be entered into evidence. As they didn't have freezers at the courthouse, they were often odourific by the time they reached the courtroom.
