I have a deep-seated aversion to most "healthy" cookbooks, on the basis that the majority of the ones I've taken the time to read tend to focus on taking regular recipes and substituting chemical-laden artificial fat-free ingredients, yielding rather icky and poor imitations.
Amen! Several of my friends love Hungry Girl. I, on the other hand, am usually left cringing at the unnaturalness of the food. I've found that books by certain "celebrity" chefs -- Tyler Florence and Cat Cora come to mind, as well as things by Alice Waters -- are tons healthier. (Not to mention better tasting.)
