I make my own pasta about once a month, and my own ravioli about half that. Viv's not fond of cheese, so I make a mushroom filling or, when we have leftover short ribs, shortrib bits. I'd be glad to show you how I make it some weekend. I have the same style of hand-roller, made by Atlas.
