Pretty much everything you experienced was part of my first pasta experience. I still enjoyed it, but it was not the quick and easy pasta experience one wants.

I have a ravioli tray that allows me to put my dough on the tray, fill it, and cover it with another sheet and roll my way to filled ravioli packages. It works pretty well as long as I don't stuff them too full.
