"New Soup, Stew, and Chili," Betty Crocker

Another glossy checkout pamphlet, and the last at least for a little while - I know, because if nothing else I have a backlog of books to write up, and I've managed to avoid falling into the all-pamphlet niche. I think this one is another hand-me-down from [livejournal.com profile] umbran's folks. We've had it on our shelves for a while, but never used it, just like most of the little shiny pamphlets, unfortuantely.

My better half had some dental work done last week, though, which meant soup for dinner, and also had the added advantage of at least knocking this book off the list before soup-season was gone for good. There were actually a couple of worthy-sounding recipes, so I may go back and take another look when the weather cools down again, but ultimately we decided to make Santa Fe Corn Chowder.

It sounds kind of trashy and lame, but it was actually pretty good. Corn, black beans, cheddar cheese, and enough seasoning to tie it all together, though if I made it again I think I'd cut the dairy base with a little broth. Decent enough to make me want to check out the other recipes in the book, at least.

"The Best of Pantry"

Apparently this is a collection of recipes from some magazine I've never heard of. I got it for $1 at Half Price Books when I lived in Ohio, and promptly shelved it and never looked at it. It seems interesting in principle, but I never managed to actually have both the desire to use it and the time to do so at the same point in time. When I finally pulled it out to look through for this project, I was surprised by the number of recipes that looked both good and interesting - this is definitely going in the "re-use" pile.

Picking out just one recipe was a challenge, but the Ricotta, Zucchini, and Tomato Pizza sounded too interesting to pass up. It was a little more work than I'm used to for homemade pizza - the recipe calls for breading and frying the zucchini slices - and we cheated and used pre-made pizza crust.... but all in all, it was to die for. Will make it again, and can't wait to dig through the rest of the book and see what else is in there.....
