Cookbook Project, Books #55 and 56

Even more glossy checkout line booklet. I promise, after this post, I move on to other things. I admit, though, I've been trying to get these out of the way. There are just so many - I hadn't realized how bad my addiction was until I started this project.
This is one I've used before, though. It's got some good summer recipes, though I mostly tend to gravitate towards the wraps. Come summer, my diet tends to narrow down to 'things I can pick from the garden' and 'things I can wrap in a tortilla and have ready to eat without turning on the oven.' So with that in mind, I started digging through the other sections of the book, and wound up making Greek Burgers.
They're amazing. Pork instead of beef, in a pita, with tomatoes and cucumber and a yogurt-and-herb dressing, and it happens to use herbs we have growing fresh in our garden, and if you use the grill it doesn't heat up the house, and I think I have another summer favorite. This book has definitely earned its place on the shelf.
"Cake Mix Magic," Publications International Ltd
I know I've already done the big Cake Mix Doctor book, but this is another glossy booklet that I bought before I got the big book. I've used it at least a couple of times, and it hasn't let me down yet. On the other hand, it doesn't have near the diversity or versatility of the other book. And all these cake mixes have kind of made me want to bake a cake from scratch. Maybe I'll dig into some of my hard-core baking books before summer fully lands.
Anyway, we had friends coming over, and I wanted a quick cake to make for dessert. And I glanced at half a dozen recipes, and speculated on all sorts of spice cakes and glazed bundt cakes and layered fruit things, but ultimately, my friends and I are children, and ultimately, I realized what I needed to make.
PB&J Sandwich Cake. It's a modern soteltie - take a white cake, bake it in two square pans, then saw off the very tippy-top to leave the squishy white cake visible. Fill the inside with homemade peanut butter icing and grape jelly. It's adorable, it's delicious in an inner-eight-year-old way, it's going to get made again at least once.
But for now, after a week or so of not having time to cook, I'm ready to get back to actual cookbooks and actual dinner.....
