I love love love love my Weight Watchers cookbook. It does a lot with simply lower-fat stuff (non-fat sour cream alternative???) and spicing. I've had a couple of problems, usually with desserts actually. They seem to take out a bit too much liquid, and I haven't figured out how to compensate yet. But in general, I really love it.
