Just in case you'd like to try it, velvetc and I have been using a recipe for eggplant parmigiana lately that is melt in your mouth delicious. It's a Mario Batali recipe from food network.
One added instruction though, once you slice the eggplant, salt it and let them sit for 20 minutes to help draw the bitterness out of them. Rinse the salt off, and start the recipe from there. Let me know how you like this recipe.
