Eggplant parm is always good, but my favorite recipe for using the stuff is in subs - slice, bread, and bake the eggplant, then layer it on hoagie rolls with lettuce, tomatoes, roasted red peppers, provolone, and Italian dressing.
Or, if I'm trying to use up lots of produce, I make ratatouille....
