Regarding the caramel issue... if you do some shopping around at gourmet candy outlets, I *HIGHLY* recommend caramels with sea salt. It sounded odd to me when I first heard about it, but the distinctive flavors that are present in sea salt blend very effectively with the sweet, buttery, almost nutty flavors of good caramel.
