Burn Notice is crazy-awesome. Vampire Diaries is also quite a lot of fun, especially in the early seasons. I'm inordinately fond of the old seventies show Emergency which is mostly on instant. Eureka is also worth checking out-- it's about the (very normal) sheriff in a town run on Mad Science!
If you're open to anime, check out Trigun and Fruits Basket. (On a related note, for squee, the original Winnie-the-Pooh is on instant now.)
Also new series Sleepy Hollow which is thus-far on Hulu and the Fox website is pure concentrated awesome delight.
