What on earth was he supposed to do with them? The French don't have "street food" in the sense that other cultures do. He wanted to give himself a leg-up with something that lots of people like, &, in that respect, chose wisely. It was, I think, the too-great amount of cheese that did him in, rather than what he made.
I also think the contest was unfair when one of the ingredients is actually rather common - I know lots of people who eat tongue, and can even tell you where to get a good tongue sandwich. Ok, it's in NY, but, still....
